Introducing Fabrice Gillotte from Dijon. An unbeatable master of his trade, meilleur ouvrier de France (top artisan of France) in 1991, and author of admirable creations such as a ganache of balsamic vinegar and strawberry jelly. Paradoxically, Gillotte is better known in the Empire of the Rising Sun, where he is regularly invited, than in his own country… However, he feels, even at the age of 45, that this is just the beginning. His charming location in the centre of Dijon was entirely renovated this past summer to give a completely new contemporary look in black, white and electric blue. The new boutique in Norges-la-Ville on the outskirts of Dijon is already a great attraction for the locals. Fabrice's 20 year old son Julien, presently finishing studies in international commerce, dreams of one day serving a worldwide market with these deserving family treasures.
